Cinnamon Roll French Toast Bake is an easy and absolutely delicious recipe that’s perfect for a weekend breakfast or brunch! Make it the night before then just wake up and bake!
Baked French toast can be made with pretty much any of your favorite breads from brioche, challah (my favorite), croissant, thick texas toast or a specialty bread like cinnamon brioche (that’s being used in this recipe).

QUICK TIP
- It’s best to use day-old bread if possible. That way it will soak up the custard a little better and you’ll end up with a better textured, puffed French toast that isn’t too soggy because we don’t want that.
- This recipe can easily be made the night before which is great when you want to have something ready first thing in the morning. All you’ve got to do is pop it right in the oven in the morning and you’re good to go!
- Let the french toast bake soak for 1-2 hours minimum. This is a very important step, the longer you let the french toast soak the more time the croissants will have to soak up all the sweet custard.
- For a crispier crumble topping, refrigerate it first.
- Be sure to break up the topping because it will chill together when placed in the fridge and potentially form some larger clumps. Break these clumps up with your fingers as you add them to the French Toast toast before baking. Whatever size you leave them, is the size that they will bake into.

WHY IS MY FRENCH TOAST SOGGY?
This usually happens when you have too much dairy in the ingredients. The egg will not cook all the way through which will cause your french toast to be soggy.
CAN I REHEAT MY BAKED FRENCH TOAST?
Yes! It can be heated in the oven at 325 degrees for about 30 minutes. You can also reheat in the air fryer.

Ingredients
For the French Toast
- 6 Eggs
- 1 Cup Whole Milk
- 1 Cup Heavy Cream
- Butter, as needed
- 2 Tablespoons Vanilla Extract
- 1 Loaf Cinnamon Swirl Brioche, sliced (or any bread of your choice such as: brioche, challah, croissant, or thick Texas toast)
- ¼ Cup Light Brown Sugar
- ½ Teaspoon Ground Cinnamon
- ¼ Teaspoon Nutmeg
- Fresh Berries, optional
For the Crumble
- ¾ Cup All Purpose Flour
- ½ Cup Packed Light Brown Sugar
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Ground Cinnamon
- Pinch of Salt
- 5 Tablespoons Unsalted Butter, melted
For the Icing
- 1 Cup Powdered Sugar, Sifted
- ½ Teaspoon Vanilla Extract
- 2 Tablespoons Whole Milk
Instructions
In a large bowl combine the milk, heavy cream, eggs, brown sugar, cinnamon, and vanilla extract mix well and set aside.
Butter a large shallow baking dish, then arrange the sliced bread at the bottom.
Pour the egg mixture over and in between each piece of bread. Cover tightly with plastic wrap or foil and refrigerate for at least 2 hours, or overnight.
Whisk together the flour, sugar, vanilla, cinnamon, and salt in a large bowl until combined. Pour in the melted butter and stir to combine, breaking up any large pieces. Cover and transfer to the refrigerator (the colder the topping, the crunchier it will be).
When ready to bake, preheat the oven to 350°F and bake for about 20 minutes then remove from the oven and add the crumble on top and bake for another 20-40 minutes.
While the French toast is in the oven, in a medium bowl, mix together all of the icing ingredients.
Once the French Toast is done and cooled, drizzle on as much icing as you'd like.
Top with fresh berries and syrup, enjoy!
